Ostrich farming rises as a solution for red meat allergy sufferers

In the U.S., Brent Williams began an ostrich farm in Kentucky to provide meat alternatives for those suffering from alpha-gal syndrome, a red meat allergy triggered by tick bites. The farm, Alpha Roost Farms, currently has over 400 birds and plans to expand to 700. As demand for ostrich meat rises, many customers who have not eaten red meat in years are seeking this alternative.
